We all kind of thought the nit-picking weenie (AKA our boss) would forget about blogs in 2018. He hasn’t. So here I am with the first blog of 2018! Happy New Year! Hopefully 2017 was good to you, and you’re excited about getting another great year started. If not, well…that sucks.

Anyway, something pretty big happened to my girlfriend and I at the end of 2017. WE GOT ENGAGED! It was on Christmas Eve Eve in Leavenworth. I’ll spare you all of the details, but for some reason she said YES! Now comes the “fun” part…planning the wedding.

We don’t have any details figured out yet, mainly because she was so surprised. But the tentative plan is to have it this year. We’ll see how that goes.

That brings me to my 2018 New Year’s Resolution: Be Less Fat.

About this time two years ago, I made a resolution to eat better and lose weight. It went great! I lost about 50lbs in 3-4 months, I was eating better, feeling better, and looking better. Until I wasn’t.

The thing about losing weight is, it’s simple – it just isn’t easy. If you consume less calories in a day than your body burns, you lose weight! Simple! Actually keeping track of your calories and staying under your daily limit? That’s the hard part.

I don’t want to be this fat in my wedding pictures. So I’m going back on a diet to start the New Year. Hopefully this time I won’t fall back into old habits once I lose weight. The weird thing is…I’m actually excited to start the diet this time because of the Instant Pot my fiancée got for Christmas.

Do you have one? Have you seen these things?? They’re freaking amazing! I don’t want to seem like I’m exaggerating here, but it’s actually life changing. Why am I just now finding out about their awesomeness? You want a roast? You can cook it in an hour. Chili? Ready in 20 minutes. You can cook ANYTHING in there – rice, eggs, meat, veggies, soups…you name it! You can basically have dinner ready in less than half the time you normally would with the push of a button.

It’s everything I love about a crock pot, with one huge advantage: it’s extremely fast. I cooked four cups of rice last night in 10 minutes! Without a rice cooker that normally takes what, half an hour? At least?

Honestly, if you’re trying to lose weight or eat better for your New Years resolution GET ONE OF THESE INSTANT POTS! I’m actually looking forward to cooking with it because I don’t have to take up my whole night making dinner or lunches for the week. Plus, you only have one dish to clean at the end! I’m seriously in love with this thing.
